Abstract

The main objective of this research was to identify the change of food regimes in the communities of Saraguro canton, Loja province. Undoubtedly, several Latin American countries have undergone major changes in food regimes, due to multiple factors, both external and internal. While it is true, there is a tendency of change at the macro level, expressed in large components; However, we consider that the change of regimes did not occur of the same magnitude in several of the Latin American countries, due to the socio-cultural complexity that they present. That is why these changes can be studied from different perspectives, since they are several factors that influence, such as political, social, economic, cultural. In this work we limit ourselves to analyzing only the incidence of public policies, considering the components of exchange of goods (market), modernity-technology and land tenure or agrarian reform.
